How to Make a Moist Applesauce Dessert Cake

1 1/2 cups applesauce

1/2 cup vegetable shortening

2 cups granulated sugar

1 egg, slightly beaten

2 1/2 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon allspice

1 cup raisins, chopped

1/2 cup black walnuts, finely chopped

2 teaspoons baking soda

1/2 cup boiling water

Preheat oven to 350 degrees.

In a large mixing bowl, cream together the vegetable shortening with the granulated sugar. Stir in the egg and applesauce. In a separate mixing bowl, sift together the all-purpose flour, salt, cinnamon, cloves and allspice and set aside.

In a small saucepan, bring a 1/2 cup of water to a boil and stir in the baking soda until it has dissolved. Alternating with the flour mixture, slowly stir in 1/3 of the boiling water to the creamed mixture and then stir in 1/3 of the flour mixture to the creamed mixture. Continue doing this until the water and flour mixtures have been completely added to your creamed mixture. Stir in the chopped raisins and walnuts until all ingredients are well combined.

Pour batter into a well-greased tube pan (bundt pan) and bake in a 350 degree oven for 50 to 60 minutes or until done.

Let your cake cool completely before removing it from the tube pan. I recommend storing your cake in an airtight cake container.

Serves 4 - 140 calories - 4g fat per portion
450g 1lb uncooked diced boneless chicken breast
2 tablespoons curry paste
1 medium onion, chopped
2 tablespoons curry powder
2 cloves garlic, crushed
336g (12oz) mushrooms, sliced
1 tablespoon flour to thicken
Salt to season
3/4 pint stock made with chicken stock cube

In a nonstick pan, dry fry the chicken, onion, garlic and mushrooms for about 5 minutes.
Once the juices start to flow add the curry powder and paste.
Stir well to ensure all the chicken and vegetables are coated with the spices.
Cook for 2-3 minutes. Add the stock, bring to the boil then turn down the heat.
Simmer for 35-45 minutes make sure the chicken is cooked through.
Mix the flour with a little water to form a paste and stir into the curry to thicken. Cook for a further 4-5 minutes until thick.

Low Fat Dessert- Lemon and Lime Cheesecake
Serves 8 - approximately 157 calories - 11.1 g fat per serving

7 low fat digestive biscuits, crushed
56g (2oz) low fat spread
1 packet sugar free lemon & lime jelly
2 medium sized eggs (separated)
168g (6oz) low fat cream cheese
140g (5oz) low fat yogurt

Gently melt low fat spread in a nonstick pan. Stir in biscuit crumbs and spread in a tin. Dissolve sugar free jelly in ¼ pint of hot water and leave to cool. Beat together low fat cream cheese and the 2 egg yolks, add yogurt and cooled jelly. Whisk egg whites and fold into the mixture. Spread over the biscuit crumbs. Put into fridge to set. Before serving decorate with slices of kiwi, strawberries etc.

Italian Dessert Cannoli Recipe

Cannolis are a great Italian dessert and they were said to have been developed by Sicilians in Palermo, Italy. These fried wafers are filled with a mixture of ricotta, candied fruit, chocolate, and other ingredients, and they are very, very tasty! Sicilians are supposed to have created this great dessert recipe, and I think that they are just delicious. I hope that this recipe is fairly easy to follow. You will need some type of dowel or metal tube that you will use to form out your cannoli shells. If you have a 3 ½ inch in diameter ring or even a 3 inch ring, you will need this to form the shape of your shells, also. You will also need a deep fryer, or a pan that is deep enough for these shells to float in oil.

Ingredients for Cannoli Shells:

3 Cups of unsifted flour

Italian Dessert Cannoli Recipe

1/4 Teaspoon of cinnamon

1/2 Teaspoon of salt

3 Tablespoon of granulated sugar

2 eggs

2 Tablespoon of firm butter cut into small cubes

1/4 Cup of a good Marsala wine

1-2 egg whites, whisked slightly

First thing is to sift the flour with salt, cinnamon, and granulated sugar. You will make a well in the center of your sifted flour mixture. In the middle of the well you have made you will add the egg and butter and start mixing with a fork. You will work the egg mixture with the fork from the center out, to incorporate the moist egg with the flour mixture. You will then add your Marsala wine slowly until dough begins to come together like a playdough mixture. You will then start working the dough with your hands to form the dough into a dough ball. You will then cover and let the dough rise for about 10-15 minutes.

If you have a stainless area to work on great, if not you will need a wooden cutting board. You will need to slightly dust the area you plan to work on with a small amount of flour. You will then roll out the dough into 1/4 inch thickness. You will then use your 3 ½ rings and cut the cannoli shell circles. You will then use a rolling pin to roll the circles into oblongs or ovals. You will then take your dowels or tubes and wrap the dough around cannoli forms. You will then whisk your egg white, and seal your dough edges by using a brush or very clean hands if you have no brush. You will then roll up ever so slightly the ends so they will have a very faint lip or ring on the edge of the cooked product.

At some point when you are ready to get your shells into the oil to start cooking them you will heat your oil to around 350 degrees. Once it is at the proper temperature you will begin to fry two, or three at a time in deep hot fat for about 1 minute, or until lightly golden. Remove with tongs to paper towels to drain, you will then let cool for about 30 seconds to one minute and then slip out cannoli form, holding shell carefully so you will not break it. Cool shells before filling. Let them hang out while you will start to make your filling.

Ingredients for the Cannoli filling:

3 lb. ricotta cheese, that has had moisture removed

2 1/2 Cup of confectioners' sugar

1/4 Cup of semi-sweet chocolate pieces or grated sweet chocolate

1/4 Cup candied cherries, finely chopped

1/2 Teaspoon of cinnamon

1/2 Cup of chopped pistachio nuts

Confectioners' sugar to dust each of the finished Cannoli's maybe about 1/2 Cup

First thing you will want to do is take your ricotta and place into cheesecloth and wrap it into a ball and then you will tie a knot in the top part of the ball you have made. You will want to hold over night if possible to drain the water from the ricotta. If you have some way to hang the cheese ball in your refrigerator that would be best. You will need to have a bowl under the cheese to catch all of the moisture that will drain off of the ricotta. The shells that you have made will hole for a couple of days if you want to make these in stages. They are worth the wait, and the time taken to make these little delicacies.

First you will take the drained ricotta and get it into the bowl and work it for a minute or two to get it more pliable. You will gently start to combine the cheese, and the sugar into a mixing bowl, and fold in with a spatula until you obtain a light, airy blend of ingredients. You will start to fold in the minced candied fruit and the chocolate very gently. You will then start to spoon the cheese filling into a pastry bag, or a large Ziploc if you do not have a pastry bag. You will then twist the top into a knot to keep the filling from emerging, and fill each of the Cannoli shells, squirting the filling in from either end.

Once you have all of the shells filled you will dip the ends of the cannoli in the pistachios. You will then arrange all of the Cannolis on a platter, and sprinkle with a little powdered sugar, and they're ready. If you would like to garnish you can save some of the candied cherries and place them on the center of each Cannoli after the powdered sugar has been applied. Then serve, and enjoy.

Ingredients:

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar

  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

Quick Napoleon Dessert Recipes

A traditional Napoleon is a French dessert made from layers of puff pastry spread with a vanilla pastry cream. The top of the rectangle or triangular shaped sweet is drizzled with chocolate and or dusted with powdered sugar. Historians say that the Napoleon was created by a Danish royal chef in honor of a visit by a French emperor. And that Emperor Bonaparte's defeat at Waterloo was the result of an overindulgence of his now famous namesake pastry.

You may have a hard time distinguishing after eating a Napoleon what part is the best part. Is it the puff pastry or the pastry cream? I think all of the flavor combinations work very well together, so, I say all of it! This is a very quick and easy dessert recipe, and you will not spend all day in the kitchen. We are going to take the shortcut method and make it work for our recipe.

Dessert

Making puff pastry from scratch is not an easy task to undertake. It is a labor and time intensive endeavor. Perfectly chilled ingredients, repeated rolling to the correct thickness, and precision folding are the keys to faultless puff pastry. Not to mention working in a kitchen that is not humid. The meticulous rolling and folding, along with the moisture in the butter, creates steam which causes the dough to puff and separate into the flaky layers that the pastry is known for. Some chef's recommend anywhere from thirty minutes to two hours chilling time between rolling and folding. Consider that the roll, fold and chill process is done four times, you need to block off two to eight hours to make puff pastry. Or, take a trip to the frozen food section of the grocery store and buy it.

Quick Napoleon Dessert Recipes

Ready made puff pastry is available in sheets or shells. To thaw it at room temperature takes about thirty minutes, in the refrigerator about four hours. It will keep in the refrigerator up to two days. When shaping the dough, work with one sheet at a time, refrigerating remaining sheets until ready to use. As with all dough handle as little as possible. A pastry wheel, pizza cutter or sharp knife are the best utensils for cutting the dough. Cut edges should be crisp to keep the layers separate so that they puff during baking. Always bake puff pastry in a conventional oven and keep in mind that darker baking sheets cook faster.

Vanilla pastry cream is the standard filling for a Napoleon. This is a very short recipe for making quick Napoleons.

1 Package of frozen puff pastry dough

2 Packages of Vanilla instant pudding

1 Bottle of a good chocolate fudge or chocolate drizzle

3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling follow directions for thawing, unfolding and baking puff pastry sheets. Cut into desired shape at bake at 400° for twelve minutes or until golden. Pay close attention to baking time, sheets burn easily. Let cool to room temperature.

To assemble you will place a layer of pastry in bottom of a sheet pan. You will then gently spread with a layer of pudding, then another layer of pastry. Repeat the layering process until ingredients are used up. You will then heat your chocolate fudge until it is at a pouring consistency. You will pour or drizzle over the tops of your Napoleons, and dust very lightly with the confectioners sugar. You will need a serrated knife to cut these into bars to sreve. Keep refrigerated until serving time.

If you want to substitute a low fat, or zero fat pudding in this recipe, there is still enough sugar to give it flavor with half or no fat in the pudding.

Chill it for a couple of hours or serve it hot. It tastes great either way! This recipe makes enough to serve four people.

What you will need:

  • 2 cups brown sugar
  • 1 1/2 lbs sweet potato
  • 2 limes
  • 1 stick cinnamon
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 3 egg yolks
  • 1 tablespoon butter
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon ground cinnamon or grated cinnamon stick
  • Water, as needed
How to make it:

Peel and chop the sweet potato and cover it with water in a pan. Add a teaspoon of salt and boil it for twenty minutes or until tender. Drain the potato and mash it using a fork, blender, or food processor.

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a couple of minutes, then take the pan off the heat and stir in the vanilla. If the mixture is too runny, you can mix a quarter cup of cornstarch with a quarter cup of water and add this. Divide the sweet potato pudding between serving bowls and garnish each one with a little ground cinnamon.

- Strawberry lovers can try this with a smile on their lips: Blend 8 ounces of plain nonfat yogurt, one-fourth cup of skim milk, and 3 packets of Equal sweetener (or 1 teaspoon of Equal). With blender on, open the top lid and gradually add 3 cups of frozen strawberries. Blend until smooth. Add ice cubes and blend and process until smooth. (Nutritional value: 76 calories, 0 grams of fat, 2 mg of cholesterol, 54 mg of sodium, 0 grams of saturated fat, 2 grams of dietary fiber, 14 grams of sugar, 4 grams of protein, 16 grams of carbohydrates.)

- Grandma is a coffee lover and gives herself a once-a-week treat by making this smoothie: Blend 3 cups fat-free milk (not low-fat, mind you), a cup of water, half a cup of sugar-free chocolate flavored syrup, 2 teaspoons of instant coffee granules and a teaspoon of vanilla extract. Add 1 quart of vanilla sugar-free and fat-free ice cream in the blender. Blend until creamy. Note: most blenders are a bit small for this recipe, so you can pour half of the coffee mix in a bowl and put in half of the ice cream. Blend until creamy; pour in a pitcher. Combine remaining chocolate mix and ice cream and repeat process. (Nutritional value: 124 calories, 2 grams of fat, 7.2 grams of protein, 25.1 grams of carbohydrates, 1 grams of saturated fat, 0.5 grams of dietary fiber, 2 mg of cholesterol, 125 mg of sodium.)

Our friend Judy is revising an "Old Family Recipe" book she put together in 1998 and gave to members of her family to showcase some of their favorite recipes, so she shared the following flour-free, quick and easy dessert recipes with us:

Banana Split Cake

\"Sugar Free Dessert \"

(No baking required)

Some Quick and Easy Flour-Free Dessert Recipes

Ingredients

5-7 bananas

3 sticks butter

1 large container of whipped topping

1 bottle of red maraschino cherries

half-cup of crushed pecans

2 cups crushed graham crackers

1 medium can crushed pineapple in its own juice

2 cups powdered sugar

2 eggs

Directions

o Beat eggs, 2 sticks of butter, and powered sugar for 15 minutes. Set aside.

o Mix 1 stick butter and graham cracker crumbs. Pat into 13- x 9-inch pan.

o Spread first mixture over crust, and then cover with sliced bananas.

o Spread well-drained pineapple over the bananas and cover with whipped topping.

o Sprinkle pecans over top, placing a cherry in each section of about the size you plan to serve.

o Refrigerate several hours and serve.

Chocolate Éclair Cake

(No baking required; easy as 1, 2, 3, 4)

1. Butter a 13- x 9-inch dish, and then line it with whole graham crackers.

2. Mix one 6-ounce package of instant French vanilla pudding with 3 cups of whole milk and blend for 2 minutes.

3. Fold in one 9-ounce container of whipped topping. Pour a good layer of the mixture over the crackers, then add another layer of crackers, then more pudding mixture.

4. Top with graham crackers. Frost with fudge icing made as follows:

o Combine ¾ cup of sugar and ¼ cup of honey, 1/8 teaspoon of salt, 1/3 cup cocoa, ¼ cup of milk.

o Bring to a boil and cook for 1 minute.

o Remove from heat.

o Add ¼ cup butter and 1 teaspoon of vanilla flavoring.

o Cool, then beat until it's smooth and thick enough to spread over the top of the crackers.

o Refrigerate for 24 hours, then serve.

Icebox Fruit Cake

(No baking required)

Ingredients

1 box graham crackers, crushed

1 stick melted butter

1 can evaporated milk

1 bag coconut

1 cup sugar(alternatively, minus 1 tablespoon, then add 1 tablespoon of honey)

2 cans sweetened condensed milk

1 bag of small marshmallows

1 cup of chopped walnuts or pecans

Candied cherries, if desired

Directions

Melt marshmallows and mix all ingredients in a large pan.

Pour into individual containers for storage in refrigerator at least 24 hours before serving.

Ritz Cracker Pie

(Light baking required; but quick stir-up)

Beat whites of 3 eggs till they are stiff.

Beat in 1 cup of sugar

Fold in 1 teaspoon vanilla flavoring, 1 cup chopped pecans, and 25 crushed Ritz crackers.

Pour into greased pie pan and bake at 350 degrees for 20-25 minutes.

Chill then cover. Serve when your guests are ready.

From Scratch Chocolate Pudding

(Minimal baking required)

Ingredients

2 cups of sugar

2 large or 3 small eggs

4 tablespoons cocoa

4 tablespoons cornstarch

a tad of vanilla flavoring

Directions

Mix sugar, cocoa, and cornstarch until smooth. Add milk and beaten egg yolks. Cook in skillet (preferably cast iron) until thick. Add vanilla. Pour into baking dish and top with beaten egg whites and put in 350-degree oven till egg whites turn lightly brown.

Alternatively, add pecans or coconut. Substitute 3 tablespoons corn meal for the cocoa. Pour in a greased pie plate and bake for a crustless pie.

We haven't tested all of these recipes, yet, but Judy and her family highly endorse them. We encourage you do use them as the basis of some creative cooking. We see opportunity to add other flavorings and spices, substitute honey for some of the recommended granulated sugar, and in general just have some fun.

1. Pre-heat oven to 325F

2. Line a 12-cup muffin pan, with cupcake papers

3. Beat the butter, cheese, lemon rind, sugar and eggs until smooth and creamy

4. Sift the flours together

5. Add the flour gradually to the cheese mixture
6. Beat on a low speed, until just combined

7. Divide the mixture evenly between the 12 muffin tins

8. Bake for 25 minutes until firm to touch

9. Allow to cool for a few minutes and then transfer to a wire rack

Yields: 12 cupcakes

Frost with purchased lemon frosting. Enjoy

Basic Vanilla CupCake Recipe

Ingredients:

  • *5 oz. Butter - softened
  • *5 oz. superfine sugar
  • *6 oz. self-raising flour
  • *3 eggs
  • *1 tsp. vanilla extract

Instructions:

1. Preheat the oven to 350F

2. Line a 12-cupcake pan, with cup cake papers

3. Crack the eggs into a cup and beat lightly with a fork

4. Place all the ingredients in a large bowl

5. Beat with an electric mixer for 2 minutes, until light and creamy

6. Divide the mixture in the muffin pan

7. Bake for 18-20 minutes until risen and firm to touch

8. Allow to cool for a few minutes and then transfer to a wire rack

9. Allow to cool fully before applying the frosting

Yields: 12 cupcakes

Frost with purchased vanilla frosting. Enjoy

7 eggs, 1/2 cup fruit juice especially orange, ¾ tsp cream of tartar, 3 tbsp sugar substitute, 2 tbsp lemon juice, 1/4 tsp salt and 1 1/2 cup sifted cake flour.

Method

Take the egg whites and beat it with salt till nice foam is formed. Later add tarter cream to it and make it a bit stiff. Later mix all the remaining ingredients well in a separate bowl. You need to now put these blended ingredients in beaten egg whites. A greased pan would work well for the cake to be baked. Cook it at 350 degrees for almost 40 minutes. Later, check the cake with a tooth pick, if required heat it for some more time till baked. The cake will taste best with a fruit jelly with zero sugar in it.
